Michelle: Where are you originally from?
Will: I was raised in Springfield, Missouri and moved to the Cooperstown area after I met my wife. We relocated to the Finger Lakes in October 2017 to work at Schrader Farms.
M: How did you get started smoking meat?
W: I started out harvesting animals and doing whole carcass processing in a small custom meat shop in Edmeston, NY. Eventually that’s where I started to learn about smoking and curing meat.
M: What do you like most about your job?
W: I like having the freedom to use my creativity to develop new products, but I also appreciate the community based, family atmosphere at Schrader Farms.
M: What is your favorite product to make?
W: Anything that puts a smile on the customers face.
M: What is your favorite product to eat?
W: Hotdogs and bacon.
